Ingredients.
2 ounces of gin (try New Zealand-made Rogue Society’s artisan dry gin)
A dash of fresh lemon juice
1/2 teaspoon of superfine sugar
1 egg white
Soda water
Preparation.

Pour the gin, lemon juice, sugar and egg white into a cocktail shaker filled with ice.
Shake it!
Strain it into a chilled highball glass with ice cubes.
Top it off with soda water.
